Meatloaf with Omelette

Ingredients
- 500g of ground meat (beef or a mix of beef and pork)
- 2 eggs (for the mixture)
- 100g of grated Parmesan cheese
- Salt and pepper to taste
- Breadcrumbs as needed
- Flavouring: garlic powder, chopped parsley (optional)
- 4-5 eggs (for the omelette)
- Salt and pepper to taste (for the omelette)
- Olive oil
- Ingredients of choice to enrich the omelette (such as cheeses, vegetables, mushrooms, etc.)
Preparation
- Start by preparing the omelette. In a bowl, beat the 4-5 eggs, add salt and pepper and any additional ingredients you prefer. Heat a drizzle of olive oil in a pan and cook the omelette, browning it on both sides. Once ready, set it aside.
- In a large bowl, place the ground meat, add the two eggs, grated Parmesan cheese, salt, pepper, garlic powder, and chopped parsley if you like. Mix well until you have a homogeneous mixture.
- If the mixture is too soft, add breadcrumbs until you get the right consistency.
- Spread the meat mixture out on a work surface or on a sheet of baking paper, giving it the shape of a rectangle about 1-2 cm thick.
- Place the cold omelette in the center of the meat rectangle, then roll the meat around the omelette, trying to close the sides well to prevent the filling from coming out during cooking.
- Seal the meatloaf well and transfer it to a lightly greased baking dish. If you wish, you can cover the meatloaf with slices of bacon or raw ham to add flavor and keep the meat moist.
- Bake in a preheated oven at 180°C for about 45-60 minutes, depending on the size of the meatloaf.
- Once cooked, let the meatloaf rest for a few minutes before slicing.
