Meatballs with Vegetables and Parmesan

Ingredients
- 500 g of ground meat (beef, pork, or a mix of both)
- 1 medium zucchini
- 1 medium carrot
- 1 small onion
- 100 g of grated Parmesan
- 1 egg
- 2 tablespoons of breadcrumbs
- Salt and pepper to taste
- Extra virgin olive oil
- Chopped parsley (optional)
Preparation
- Start by grating the vegetables: the zucchini, carrot, and onion. Squeeze the grated vegetables to remove excess water.
- In a large bowl, mix the ground meat with the grated vegetables, Parmesan, egg, breadcrumbs, salt and pepper. If you like, you can also add a bit of chopped parsley for a touch of freshness.
- Knead the mixture well until it is homogeneous.
- Take small portions of the mixture and form round meatballs with your hands.
- Heat a drizzle of oil in a pan and cook the meatballs until they are golden brown and cooked inside, about 10-15 minutes. You can also choose to bake them in the oven at 180 °C for about 20-25 minutes if you prefer a lighter cooking method.
- When they are ready, serve them hot with a sprinkling of grated Parmesan on top.
