Pan-Fried Meatballs with Potatoes

Ingredients
- 500 grams of ground meat (you can use beef, pork, or a mix)
- 2 medium-sized potatoes
- 1 egg
- 1 clove of garlic
- 50 grams of grated Parmesan cheese
- Breadcrumbs as needed
- Chopped fresh parsley
- Salt and pepper
- Extra virgin olive oil
Preparation
- Start by washing the potatoes, peel them, and then grate them with a coarse grater.
- In a large bowl, mix the ground meat with the grated potatoes, egg, grated Parmesan, finely chopped garlic, parsley, salt, and pepper. Blend all the ingredients until you get a homogeneous mixture.
- Form meatballs the size of a walnut and coat them in breadcrumbs until evenly covered.
- Heat a drizzle of olive oil in a wide pan and when it’s hot, lay the meatballs in it. Cook over medium heat, turning occasionally, until they are nicely browned and cooked inside, this will take about 10-15 minutes depending on the size of the meatballs.
- Once ready, remove the meatballs from the pan and let them rest on paper towels to remove the excess oil.
- Serve the meatballs hot, possibly accompanied with a fresh green salad or some crispy bread.
