Beef Tartare on Bruschetta

Beef tartare on bruschetta is a simple but elegant dish that combines the traditional beef tartare with the rustic touch of toasted Italian bread. Here is the recipe to prepare this appetizer:

Ingredients

  • 200 g of high-quality beef tenderloin
  • 4 slices of homemade bread
  • Extra virgin olive oil
  • Salt and black pepper to taste
  • Lemon juice (optional)
  • Chopped capers (optional)
  • 1 clove of garlic
  • Dijon mustard (optional)

Preparation

  1. Start by cleaning the beef tenderloin of any sinew or fat and then finely chop it with a knife until you obtain a tartare. Do this step just before serving to keep the meat fresh and tasty.
  2. Season the meat with a pinch of salt and pepper, a drizzle of olive oil, and, if you like, a bit of lemon juice and chopped capers for acidity and flavor. If you want a stronger taste, you can add a bit of Dijon mustard.
  3. Toast the slices of homemade bread in the oven or on a grill until they are crispy and golden.
  4. Lightly rub the toasted bread with a clove of garlic to flavor it.
  5. Place a portion of beef tartare on top of each bruschetta and garnish with a drizzle of extra virgin olive oil.
  6. Serve immediately to enjoy the contrast between the freshness of the tartare and the crispness of the bruschetta.

Curiosity

Beef tartare has very ancient origins and according to some stories the name comes from the Tartar knights, who were said to tenderize the meat under the saddles of their horses. Today, the preparation is a classic of gourmet cuisine, appreciated for the quality and freshness of the ingredients.

To accompany this dish, you could choose a light and medium-bodied red wine, such as a Pinot Noir or a Dolcetto d’Alba, that does not overpower the delicate taste of the tartare.
