Meat rolls with mortadella and cheese
17/11/2023Meat rolls stuffed with mortadella and cheese are a delicious dish that combines rich and tasty flavors. Here is the recipe to prepare them in the Italian style:
Ingredients
- 8 thin slices of beef or pork (such as veal top round, rump or pork loin)
- 8 slices of mortadella
- 150 g of soft cheese (for example, sweet provolone or scamorza)
- Flour, as needed
- Extra virgin olive oil
- Salt and pepper, as needed
- Dry white wine, 100 ml
- Meat or vegetable broth, as needed
- Kitchen twine or toothpicks
Preparation
- Flatten the meat slices slightly with a mallet to make them tender and even.
- Lay a slice of mortadella and some cheese cut into strips or cubes on each meat slice.
- Roll up the slices on themselves to form rolls and close them with kitchen twine or toothpicks so they keep their shape during cooking.
- Coat the rolls lightly in flour.
- In a large skillet, heat a drizzle of olive oil and add the rolls.
- Brown the rolls on all sides until they are colored.
- Deglaze with white wine and let the alcohol evaporate.
- Lower the heat, add some broth, season with salt and pepper, and cook covered for about 20 minutes, adding broth if needed.
- Once cooked and tender, remove the rolls from the skillet and keep them warm.
- In the remaining cooking juices, you can create a sauce by reducing the liquid or adding a bit of flour to thicken it.
Serve the rolls hot, accompanied by their sauce and, if you like, a side of vegetables or mashed potatoes.
