Meat Ravioli with Tomato Sauce

Ingredients
For the ravioli:
- 300 g of “00” flour
- 3 medium eggs
- Salt to taste
For the filling:
- 200 g of ground meat (veal or a mix of veal and pork)
- 50 g of chopped prosciutto
- 30 g of grated Parmesan cheese
- 1 small egg
- Nutmeg to taste
- Salt and pepper to taste
For the tomato sauce:
- 500 g of peeled tomatoes
- 1 clove of garlic
- Fresh basil to taste
- Salt and pepper to taste
- Extra virgin olive oil to taste
Preparation
For the ravioli:
- In a bowl, place the flour and make a well in the center.
- Break the eggs inside and add a pinch of salt.
- Using a fork, start to beat the eggs gradually incorporating the flour.
- Knead with your hands until you acquire a smooth and homogeneous dough.
- Wrap the dough in cling film and let it rest for 30 minutes.
For the filling:
- In a bowl, combine the ground meat, chopped prosciutto, Parmesan cheese, the egg, and a pinch of nutmeg, salt, and pepper.
- Mix well until you have a homogeneous mixture.
To assemble the ravioli:
- Roll out the dough with a rolling pin or a pasta machine to get a thin sheet.
- Place small amounts of filling on the sheet, spaced apart.
- Cover with another sheet and press firmly around the filling to seal the ravioli.
- Cut out the ravioli with a pastry wheel or a cutter.
For the tomato sauce:
- In a frying pan, sauté the garlic clove in extra virgin olive oil.
- Add the peeled tomatoes and cook over medium heat for about 15-20 minutes.
- Crush the tomatoes as they cook to break them down and cook the sauce.
- Add salt, pepper, and fresh basil towards the end of cooking.
Cooking and serving:
- Bring a pot of salted water to a boil.
- Cook the ravioli for about 3-4 minutes or until they float to the surface.
- Drain the ravioli and dress them with the tomato sauce.
- Serve hot with a sprinkle of Parmesan cheese.
