Mascarpone Tart
17/11/2023The mascarpone tart is a classic dessert. Here is a basic recipe you can follow:
Ingredients
- 250 g of all-purpose flour
- 125 g of cold butter, cut into cubes
- 90 g of granulated sugar
- 1 whole egg and 1 egg yolk
- A pinch of salt
For the mascarpone filling:
- 250 g of mascarpone
- 2 eggs (with yolks and whites separated)
- 90 g of granulated sugar
- Grated zest of 1 lemon (untreated)
Preparation
- In a bowl, combine flour and butter, working them with your fingertips until you get a sandy mixture.
- Add sugar, salt, whole egg, and yolk and quickly knead to form a ball. If the dough is too dry, add a tablespoon of cold water.
- Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
- In the meantime, prepare the filling: mix the mascarpone with sugar and grated lemon zest.
- Separate the yolks from the whites and add the yolks to the mascarpone mixture.
- Beat the whites into stiff peaks and gently fold them into the mixture to avoid deflating them.
- Preheat the oven to 180 °C.
- Roll out the shortcrust pastry on a lightly floured surface and line a tart pan, previously buttered and floured, creating a high edge.
- Pour the mascarpone mixture over the base.
- Bake for about 30-35 minutes or until the tart is golden and the filling is set.
- Let it cool completely before serving.
