Mascarpone Tart

The mascarpone tart is a classic dessert. Here is a basic recipe you can follow:

Ingredients

  • 250 g of all-purpose flour
  • 125 g of cold butter, cut into cubes
  • 90 g of granulated sugar
  • 1 whole egg and 1 egg yolk
  • A pinch of salt

For the mascarpone filling:

  • 250 g of mascarpone
  • 2 eggs (with yolks and whites separated)
  • 90 g of granulated sugar
  • Grated zest of 1 lemon (untreated)

Preparation

  1. In a bowl, combine flour and butter, working them with your fingertips until you get a sandy mixture.
  2. Add sugar, salt, whole egg, and yolk and quickly knead to form a ball. If the dough is too dry, add a tablespoon of cold water.
  3. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
  4. In the meantime, prepare the filling: mix the mascarpone with sugar and grated lemon zest.
  5. Separate the yolks from the whites and add the yolks to the mascarpone mixture.
  6. Beat the whites into stiff peaks and gently fold them into the mixture to avoid deflating them.
  7. Preheat the oven to 180 °C.
  8. Roll out the shortcrust pastry on a lightly floured surface and line a tart pan, previously buttered and floured, creating a high edge.
  9. Pour the mascarpone mixture over the base.
  10. Bake for about 30-35 minutes or until the tart is golden and the filling is set.
  11. Let it cool completely before serving.
