Mascarpone Cream

Mascarpone cream is a classic ingredient in Italian cuisine, often used as a base for many desserts, including the famous tiramisu. Here is the recipe to prepare a delicious mascarpone cream:

Ingredients

  • 250 grams of mascarpone
  • 2 egg yolks (make sure to use fresh, high-quality eggs)
  • 60 grams of powdered sugar (or granulated sugar if you prefer)
  • 1/2 vanilla bean (or 1 teaspoon of vanilla extract)
  • Optional: a pinch of salt

Preparation

  1. In a bowl, whisk the egg yolks with the sugar using an electric mixer or a manual whisk until you obtain a light and fluffy mixture.
  2. Split the vanilla bean lengthwise and scrape out the seeds with the tip of a knife. Add the vanilla seeds (or extract) to the egg and sugar mixture and mix well.
  3. Add the mascarpone to the egg and sugar mixture. If you wish, you can also add a pinch of salt to enhance the flavors.
  4. Work everything with the whisk until you get a smooth and homogeneous cream. Make sure there are no lumps.
  5. Once ready, the mascarpone cream can be used immediately to fill sweets and desserts or stored in the fridge for a couple of days.
