Mascarpone and Zucchini Savory Pie

The savory pie with mascarpone and zucchini is a simple dish to prepare and very tasty. Here is the recipe.

Ingredients

  • 1 roll of round puff pastry
  • 300 g of zucchini
  • 250 g of mascarpone
  • 2 eggs
  • Grated Parmesan (to taste)
  • Salt and pepper as needed
  • Extra virgin olive oil
  • Fresh or dried chives (optional)

Preparation

  1. Preheat the oven to 180 °C (356 °F).
  2. Wash the zucchini and cut them into thin slices. In a pan, heat a drizzle of extra virgin olive oil and sauté the zucchini until they become soft. Add a pinch of salt.
  3. In a bowl, mix the mascarpone with the eggs until you get a smooth mixture. Add the grated Parmesan, salting and peppering to taste.
  4. Roll out the puff pastry in a pie dish, preferably with parchment paper underneath to prevent sticking.
  5. Distribute the cooked zucchini on the puff pastry base.
  6. Pour the mascarpone and egg mixture over the zucchini, leveling with a spoon or spatula.
  7. If desired, sprinkle the surface with chives to add an aromatic touch.
  8. Bake the savory pie for about 25-30 minutes or until the surface is golden brown and the puff pastry is well cooked.
  9. Take the savory pie out of the oven and let it cool slightly before serving.
