Mascarpone and Strawberry Cake

The mascarpone and strawberry cake is a fresh and delicious dessert, perfect for the spring season or for a special occasion. Here is the recipe:

Ingredients

  • 250 g of dry biscuits (such as Digestive or Oro Saiwa)
  • 100 g of melted butter
  • 500 g of mascarpone
  • 100 g of powdered sugar
  • 300 g of fresh strawberries
  • Juice of 1 lemon
  • 4 sheets of gelatin or 2 teaspoons of gelatin powder
  • Strawberries for decoration

Preparation

  1. Start by preparing the base: finely chop the biscuits in a mixer and then mix the crumbs with the melted butter until you get a homogeneous mixture.
  2. Line the bottom of a springform pan with parchment paper and distribute the biscuit mixture, pressing well with the back of a spoon. Put in the refrigerator to firm up for about 30 minutes.
  3. In the meantime, soak the gelatin sheets in a bowl with cold water for 10 minutes (if you are using powdered gelatin, follow the instructions on the package for the correct use).
  4. Wash the strawberries, remove the stem and cut them into small pieces. Put them in a saucepan with sugar and lemon juice, and cook over medium heat for about 10 minutes until the strawberries have softened and released their juice.
  5. Blend the strawberries to obtain a smooth puree and put it back on the fire. Squeeze the water from the soaked gelatin and insert the sheets into the warm strawberry puree. Stir well until the gelatin is completely dissolved.
  6. In a bowl, work the mascarpone with the powdered sugar until you get a smooth and soft cream.
  7. Incorporate the cooled strawberry puree into the mascarpone, mixing gently to avoid deflating the cream.
  8. Pour the mascarpone and strawberry mixture onto the biscuit base and level with a spatula.
  9. Let the cake rest in the refrigerator for at least 4 hours, better if overnight, so that it sets perfectly.
  10. Before serving, decorate the cake with fresh strawberries sliced or as you prefer.
