Mascarpone and Amaretti Crostata

Ingredients

  • 1 roll of ready-made shortcrust pastry or:
    • 300 g of type 00 flour
    • 150 g of butter at room temperature
    • 120 g of icing sugar
    • 1 large egg
    • 1 yolk
    • 1 pinch of salt
    • Grated zest of 1 lemon
  • 250 g of mascarpone
  • 100 g of amaretti biscuits
  • 80 g of granulated sugar
  • 2 large eggs
  • Cocoa powder for decorating (optional)

Preparation

  1. If you’re not using ready-made shortcrust pastry, start by preparing the pastry: pour the flour into a mound on a work surface, place the soft butter pieces, icing sugar, the whole egg, yolk, a pinch of salt, and grated lemon zest in the center. Work the ingredients quickly to obtain a smooth dough. Form a ball, wrap it in film, and let it rest in the fridge for at least 30 minutes.

  2. In the meantime, prepare the mascarpone cream: in a bowl, mix the mascarpone with the granulated sugar until you have a smooth mixture. Add the eggs, one at a time, continuing to stir to blend the ingredients well.

  3. Take the shortcrust pastry dough out of the refrigerator, roll it out with a rolling pin to about 5 mm thick, and line a buttered and floured tart pan with it, making sure the pastry adheres well to the edges. Remove any excess pastry.

  4. Crush the amaretti biscuits, leaving some whole for the final decoration, and spread them on the bottom of the tart.

  5. Pour the mascarpone cream over the amaretti and level with a spatula.

  6. Bake in a preheated oven at 180 °C (356 °F) for about 30 minutes or until the cream is well set and the surface is golden.

  7. Let the crostata cool completely before removing it from the mold.

  8. Before serving, you can decorate with whole amaretti biscuits and a dusting of cocoa powder.
