Marshal's Pasta
17/11/2023Marshal’s Pasta is a delicious dish that can be prepared with a variety of seafood and a nice tomato or cream sauce, depending on your preferences.
Ingredients
- 350 grams of pasta, such as spaghetti or linguine
- 200 grams of assorted seafood (mussels, clams, shrimp, squid)
- 2 cloves of garlic
- 400 grams of peeled tomatoes or tomato puree
- Chopped fresh parsley
- Salt to taste
- Pepper to taste
- Extra virgin olive oil
- A glass of white wine (optional)
Preparation
- Clean the seafood (make sure that clams and mussels are well purged and the shrimp are peeled).
- In a large pan, gently fry the finely chopped garlic in extra virgin olive oil.
- Add the seafood and sauté for a few minutes. If you like, deglaze with a glass of white wine and let the alcohol evaporate.
- Add the peeled tomatoes or tomato puree, adjust with salt and pepper, and cook for about 10-15 minutes until the sauce has slightly thickened.
- Meanwhile, cook the pasta in plenty of salted water until it is al dente.
- Drain the pasta and transfer it to the pan with the seafood sauce, mixing well to combine everything.
- Plate and sprinkle with chopped fresh parsley before serving.

According to some stories, the name “Marshal’s Pasta” could derive from the habit of military cooks preparing this dish for high-ranking officers, or because of a particular marshal who liked this type of preparation. The simplicity of the preparation and the use of fresh ingredients make it a dish suitable for many occasions, from a family dinner to a celebratory meal.
