Marshal's Pasta

Marshal’s Pasta is a delicious dish that can be prepared with a variety of seafood and a nice tomato or cream sauce, depending on your preferences.

Ingredients

  • 350 grams of pasta, such as spaghetti or linguine
  • 200 grams of assorted seafood (mussels, clams, shrimp, squid)
  • 2 cloves of garlic
  • 400 grams of peeled tomatoes or tomato puree
  • Chopped fresh parsley
  • Salt to taste
  • Pepper to taste
  • Extra virgin olive oil
  • A glass of white wine (optional)

Preparation

  1. Clean the seafood (make sure that clams and mussels are well purged and the shrimp are peeled).
  2. In a large pan, gently fry the finely chopped garlic in extra virgin olive oil.
  3. Add the seafood and sauté for a few minutes. If you like, deglaze with a glass of white wine and let the alcohol evaporate.
  4. Add the peeled tomatoes or tomato puree, adjust with salt and pepper, and cook for about 10-15 minutes until the sauce has slightly thickened.
  5. Meanwhile, cook the pasta in plenty of salted water until it is al dente.
  6. Drain the pasta and transfer it to the pan with the seafood sauce, mixing well to combine everything.
  7. Plate and sprinkle with chopped fresh parsley before serving.

Curiosity

According to some stories, the name “Marshal’s Pasta” could derive from the habit of military cooks preparing this dish for high-ranking officers, or because of a particular marshal who liked this type of preparation. The simplicity of the preparation and the use of fresh ingredients make it a dish suitable for many occasions, from a family dinner to a celebratory meal.
