Marinated Zucchini

Here’s how to prepare delicious Italian-style marinated zucchini.

Ingredients

  • Zucchini, 4 medium-sized
  • Garlic, 2 cloves
  • Extra virgin olive oil, as needed
  • White wine vinegar or apple cider vinegar, 100 ml
  • Salt, to taste
  • Black pepper, to taste
  • Fresh mint or basil, a bunch
  • Chili pepper (optional), to taste

Preparation

  1. Thoroughly wash the zucchini and slice them into rounds or sticks, depending on your preference, keeping a thickness of about 3-5 mm.

  2. Heat a grill or non-stick pan and grill the zucchini until they are well marked on both sides and just tender. The zucchini should remain crunchy, so avoid cooking them for too long.

  3. As the zucchini cool down, prepare the marinade by mixing in a wide bowl the extra virgin olive oil, vinegar, salt, freshly ground black pepper, thinly sliced or crushed garlic, hand-torn mint or basil, and if you like a pinch of chili pepper.

  4. Place the grilled zucchini in an airtight container or in a deep plate, and pour the marinade over them, making sure that each slice is well coated with the dressing.

  5. Leave the marinated zucchini in the refrigerator for at least a couple of hours, even better if overnight, so that the flavors blend well together.

  6. Before serving, remove the garlic cloves and bring the zucchini to room temperature to enhance their flavor to the fullest.
