Shrimp Marinated with Ginger Rice

Marinated shrimp with ginger rice is a light and aromatic dish that combines the delicate flavor of shrimp with the freshness of ginger. Here is the recipe with an Italian touch:

Ingredients

  • 400g of peeled and cleaned shrimp
  • 200g of basmati rice
  • 1 piece of fresh ginger (about 3 cm)
  • 2 cloves of garlic
  • Juice of 1 lemon
  • 2 tablespoons of extra virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • Chopped fresh parsley (optional)
  • 1 fresh chili pepper (optional)

For the shrimp marinade:

  • 2 tablespoons of soy sauce
  • 1 tablespoon of honey
  • 1 tablespoon of extra virgin olive oil
  • Chili flakes (if you like a spicy touch)

Preparation

  1. Start by grating the fresh ginger and finely chopping the garlic cloves. In a small bowl, prepare the marinade for the shrimp by mixing the soy sauce, honey, extra virgin olive oil, and chili flakes.

  2. Put the shrimp in a bowl and pour the prepared marinade over them. Make sure that all the shrimp are well covered by the marinade and let them rest in the refrigerator for at least 30 minutes.

  3. In the meantime, rinse the basmati rice under running water until the water runs clear. This process helps to remove excess starch.

  4. Bring a pot of lightly salted water to a boil and cook the basmati rice for the time indicated on the package, usually about 10-12 minutes.

  5. Drain the rice and let it cool. In a large skillet, heat a tablespoon of extra virgin olive oil and add the chopped garlic and ginger.

  6. When the garlic begins to brown, add the basmati rice to the skillet and sauté it together with the ginger and garlic for a few minutes. Adjust with salt and pepper and, if you wish, you can add a bit of chopped fresh parsley or chopped chili pepper for a touch of color and spiciness.

  7. Heat another skillet with some oil and drain the shrimp from the marinade (keep the marinade). Cook the shrimp for about 2-3 minutes per side or until they turn pink and slightly golden.

  8. At the end of the cooking, add the remaining marinade to the skillet with the shrimp and allow everything to caramelize slightly.

To serve, arrange the ginger rice on a plate, lay the marinated shrimp on top and, if you like, finish with a sprinkling of chopped fresh parsley. Serve warm and enjoy this aromatic dish.
