Marinated Lamb Chops with Grilled Vegetables

Ingredients
- 8 lamb chops
- 2 cloves of garlic
- Fresh rosemary to taste
- Fresh thyme to taste
- 4 tablespoons of extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Vegetables of your choice for grilling (for example, zucchini, bell peppers, eggplant, onions)
Preparation
- Start by preparing the marinade for the lamb chops. In a bowl, mix the extra virgin olive oil with lemon juice, chopped garlic, finely chopped rosemary and thyme, salt and pepper.
- Place the chops in a dish or suitable container and pour the marinade over them, making sure each chop is well covered. Cover with cling film and let marinate in the refrigerator for at least 2 hours, turning them occasionally.
- In the meantime, prepare the vegetables. Wash and cut them so they can be easily grilled. For example, if using zucchini, you can slice them longitudinally; bell peppers in wide strips; eggplants in circular slices and onions in wedges.
- Preheat the grill or barbecue to medium-high temperature.
- Remove the chops from the marinade and shake them lightly to remove excess garlic and herbs. Grill them for 3-4 minutes per side, depending on thickness and desired level of doneness (rare, medium, or well-done).
- At the same time, also grill the vegetables slightly seasoning them with oil, salt, and pepper. The vegetables will take different times to cook depending on the type and thickness; turn them occasionally until they are tender and well-marked by the grates.
- Once cooked, arrange the chops and vegetables on a serving plate and serve immediately.
