Marinated Beef Bites and Cabbage

Marinated beef bites and cabbage is a tasty and hearty dish.

Ingredients

  • 500 g of beef bites
  • 1 medium cabbage
  • 3 cloves of garlic
  • 1 sprig of rosemary
  • 1 glass of red wine
  • 4 tablespoons of extra virgin olive oil
  • Salt and pepper to taste

For the marinade:

  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of soy sauce
  • 1 tablespoon of mustard
  • 1 chopped garlic clove
  • Salt and pepper to taste

Preparation

  1. Start by preparing the marinade by mixing in a bowl the extra virgin olive oil, balsamic vinegar, soy sauce, mustard, chopped garlic, salt, and pepper. Dip the beef bites in the marinade, cover with cling film and let rest in the refrigerator for at least 2 hours, better if overnight.

  2. In the meantime, clean the cabbage by removing the outer tougher leaves and cut it into strips. In a large pan, heat 2 tablespoons of oil and sauté the garlic and rosemary for a few minutes.

  3. Add the cabbage, salt, pepper, and cook over medium heat for about 10 minutes, until the cabbage becomes soft yet still crisp.

  4. In another pan, heat the remaining 2 tablespoons of oil and sear the marinated beef bites on high heat to seal the juices inside. After a few minutes, lower the heat, add the red wine and let it evaporate.

  5. Combine the beef bites with the cabbage, mix well and continue cooking for another 5-10 minutes, until the beef is cooked to your liking.

  6. Adjust salt and pepper if necessary and serve hot.

The secret to making the meat very tender is a good marinade: it not only adds flavor but also softens the fibers of the meat making it tender and tasty. The red wine in cooking gives a rich and full-bodied note to the dish, creating a perfect balance with the sweetness of the cabbage.
