Spaghetti alla Marinara

Spaghetti alla Marinara is a classic sea dish, light and full of ocean flavors. Here’s how to prepare it:

Ingredients

  • 400 g of spaghetti
  • 500 g of mixed seafood (clams, mussels, squids, shrimps)
  • 400 g of peeled tomatoes or tomato puree
  • 2 cloves of garlic
  • Chopped fresh parsley
  • Extra virgin olive oil
  • Salt to taste
  • Fresh red chili pepper or flakes (optional)
  • 1 glass of white wine (optional)

Preparation

  1. Thoroughly clean the seafood. For clams and mussels, check that the shells are closed and wash them multiple times in salted cold water.

  2. In a large pan, heat the extra virgin olive oil and sauté the garlic cloves (and chili pepper if you’re using it).

  3. Once golden, remove the garlic and add the seafood. If you are using clams or mussels, put them in first and cover with a lid to let them open.

  4. After the shells have opened, add the other seafood and deglaze with white wine. Let it cook until the alcohol has evaporated.

  5. To the seafood, add the tomato puree or peeled tomatoes, salt, and let the sauce simmer on low heat for about 10-15 minutes.

  6. In the meantime, bring a pot of salted water to a boil and cook the spaghetti until al dente.

  7. Drain the pasta and reserve a cup of the cooking water.

  8. Mix the spaghetti in the pan with the marinara sauce and seafood, adding some of the cooking water if necessary to cream it.

  9. Serve the spaghetti alla marinara hot, sprinkled with plenty of chopped fresh parsley.
