Spaghetti alla Marinara
17/11/2023Spaghetti alla Marinara is a classic sea dish, light and full of ocean flavors. Here’s how to prepare it:
Ingredients
- 400 g of spaghetti
- 500 g of mixed seafood (clams, mussels, squids, shrimps)
- 400 g of peeled tomatoes or tomato puree
- 2 cloves of garlic
- Chopped fresh parsley
- Extra virgin olive oil
- Salt to taste
- Fresh red chili pepper or flakes (optional)
- 1 glass of white wine (optional)
Preparation
-
Thoroughly clean the seafood. For clams and mussels, check that the shells are closed and wash them multiple times in salted cold water.
-
In a large pan, heat the extra virgin olive oil and sauté the garlic cloves (and chili pepper if you’re using it).
-
Once golden, remove the garlic and add the seafood. If you are using clams or mussels, put them in first and cover with a lid to let them open.
-
After the shells have opened, add the other seafood and deglaze with white wine. Let it cook until the alcohol has evaporated.
-
To the seafood, add the tomato puree or peeled tomatoes, salt, and let the sauce simmer on low heat for about 10-15 minutes.
-
In the meantime, bring a pot of salted water to a boil and cook the spaghetti until al dente.
-
Drain the pasta and reserve a cup of the cooking water.
-
Mix the spaghetti in the pan with the marinara sauce and seafood, adding some of the cooking water if necessary to cream it.
-
Serve the spaghetti alla marinara hot, sprinkled with plenty of chopped fresh parsley.
These spaghetti offer a true explosion of taste from the sea, perfect for seafood lovers and a great choice for a festive meal or a special occasion. Enjoy your meal!
