Mariner's Rice Salad
17/11/2023The mariner’s rice salad is a tasty variant of the classic rice salad which, with its sea flavors, brings the aroma of holidays to the table. Here’s how to prepare it:
Ingredients
- 300 g of salad rice (preferably parboiled)
- 200 g of shelled mussels (already cleaned)
- 200 g of shelled clams (already cleaned)
- 150 g of shelled shrimps (already cleaned)
- 100 g of diced tomato pulp
- 1 clove of garlic
- Chopped parsley to taste
- Lemon juice
- Extra virgin olive oil
- Salt and pepper
Preparation

Start with cooking the rice. Bring a pot of salted water to a boil and cook the rice following the instructions on the package to make sure it remains al dente. Once cooked, drain it, cool it under cold running water, and then set it aside in a large bowl.

In the meantime, in a frying pan, sauté the chopped garlic with a drizzle of oil. Add the mussels and clams, cover with a lid, and let them open over medium heat. Then remove the shells and filter the cooking liquid to eliminate any sand residue.

In the same pan, add the shrimp and cook for a few minutes, until they turn pink and are done. Then add the shelled clams and mussels, let them flavor together for a minute, and then turn off the heat.

Now combine the seafood with the rice in the bowl, mix gently to avoid breaking the shellfish.

Add the diced tomato pulp, a generous handful of chopped parsley, lemon juice, a drizzle of extra virgin olive oil, salt, and pepper to taste, and mix everything again carefully.

Let the mariner’s rice salad rest in the fridge for at least one hour before serving to allow the flavors to blend well together.
The mariner’s rice salad is perfect to be enjoyed on warm summer days, perhaps accompanied by a nice glass of chilled white wine.
Curiosity
This salad can be enriched with other types of seafood such as squid or scampi, for an even richer result and closer to the flavors of the sea. Moreover, if you like experimenting, you can add some capers or olives for an additional touch of flavor.
