Ingredients

  • 1 kg of kid goat, cut into pieces
  • 2 sprigs of fresh rosemary
  • 4 bay leaves
  • 3 cloves of garlic
  • 1 glass of dry white wine
  • 50 ml of extra virgin olive oil
  • Salt and pepper to taste
  • Vinegar to taste (optional)

Preparation

  1. Begin by pre-heating the oven to 180 degrees Celsius.
  2. In a large pan, sauté the garlic in the extra virgin olive oil. Once the garlic turns golden, remove it and add the kid goat pieces. Brown the meat well on all sides until it takes on color.
  3. At this point, deglaze with the white wine and let the alcohol evaporate.
  4. Add the aromatic herbs (the rosemary and bay leaves), salt and pepper, and if you like, a splash of vinegar.
  5. Cover the pan with a lid or aluminum foil and place it in the oven. Allow to cook for about 1 hour and 30 minutes, checking occasionally and turning the pieces of meat. If necessary, add a little water during cooking to prevent the kid goat from drying out too much.
  6. Once the meat is tender and the sauce has reduced, remove the pan from the oven and let it rest for a few minutes before serving.
