Tangerine Muffins

Tangerine muffins are soft and fragrant delicacies, perfect for an energizing breakfast or snack. Here’s the recipe to prepare them.

Ingredients

  • 250 g of all-purpose flour
  • 150 g of sugar
  • 2 tangerines (juice and grated zest)
  • 100 ml of seed oil
  • 2 eggs
  • 100 ml of milk
  • 1 packet of baking powder
  • A pinch of salt

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin by lining the baskets with paper liners.
  2. Grate the zest of the tangerines, avoiding the white part, which is bitter, and then squeeze the juice.
  3. In a bowl, mix the flour with the baking powder and a pinch of salt.
  4. In another bowl, beat the eggs with the sugar until you get a light and fluffy mixture.
  5. Gradually add the seed oil, continuing to mix, and then gradually pour in the milk and tangerine juice.
  6. Incorporate the dry ingredients (flour, baking powder, and salt) into the liquid mixture, mixing with a spatula or wooden spoon until you obtain a homogeneous dough.
  7. Add the grated tangerine zest and mix gently.
  8. Fill the liners two-thirds full with the batter.
  9. Bake the muffins for about 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  10. Remove from the oven and let cool before serving.

You might want to add a special touch by adding, for example, pieces of almonds into the batter or a light tangerine sugar glaze to intensify the flavor.
