Mackerels with white wine and baked cherry tomatoes

The mackerel, also known as Atlantic horse mackerel, is a blue fish rich in flavor and omega-3. I will guide you in preparing a Mediterranean dish that blends the delicacy of this fish with the rusticity of tomatoes, creating a harmonious and flavorful union.

Ingredients

  • 4 fresh mackerels
  • 200 ml of dry white wine
  • 400 g of cherry tomatoes
  • 2 cloves of garlic
  • A few sprigs of fresh thyme
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Preheat the oven to 180°C (356°F).
  2. Wash the mackerels, gut them if necessary, and pat them dry with paper towels. Make diagonal cuts on both sides of the fish to ensure even cooking.
  3. In a baking dish, place the mackerels and season them with salt, pepper, and a drizzle of oil. Add the garlic cloves and thyme, then pour the white wine into the dish, being careful not to pour it directly onto the fish.
  4. Wash the cherry tomatoes, cut them in half, and arrange them on a separate baking dish. Dress with oil, salt, pepper, and a pinch of oregano for an additional Italian touch.
  5. Put both dishes in the oven. The cherry tomatoes need about 15-20 minutes to cook and become slightly caramelized. The mackerels require about 20-25 minutes to cook, depending on their size.
  6. Halfway through cooking, baste the mackerels with their cooking juices to keep them moist and flavorful.
  7. Once ready, serve the mackerels with the roasted cherry tomatoes and garnish with fresh thyme sprigs.

Curiosity

The mackerel, highly appreciated in seaside cuisines, is distinguished by its strong flavor, which pairs well with simple ingredients such as olive oil and aromatic herbs. It is common to find in the Mediterranean area recipes that enhance the freshness of the fish with the simplicity of flavors.

To accompany this dish, a light and fresh white wine, such as a Vermentino or Chardonnay, is ideal to complement the savoriness of the mackerel and the acidity of the tomatoes. Bon appétit!
