Mackerel Salad

Ingredients
- 4 oil-packed mackerel fillets
- 200 g of mixed greens (lettuce, arugula, baby spinach, etc.)
- 2 tablespoons of capers
- 1 small red onion
- 10 pitted black olives
- Juice of 1 lemon
- 3 tablespoons of extra-virgin olive oil
- Salt and pepper to taste
Preparation
- Begin by draining the mackerel fillets from the preservation oil and place them on a plate. If you prefer a lighter taste, you can blot them with paper towels.
- Wash and dry the mixed greens well and lay them as a base in a large salad bowl or on individual plates.
- Thinly slice the red onion and spread it over the bed of greens.
- Add the capers and black olives, either sliced into rings or left whole according to your preference.
- Arrange the mackerel fillets over the salad and dress everything with lemon juice, extra-virgin olive oil, salt, and pepper. Stir gently so as not to break the fillets, but ensuring that all the ingredients are seasoned.
- Let it rest for a few minutes before serving so that the flavors can meld together well.
