Lupini Crackers

Lupini crackers are an alternative and nutritious snack, great for those following a diet rich in plant proteins. Here’s how to prepare them:

Ingredients

  • 200 g of lupini flour
  • 100 g of wheat flour (or another type in case of intolerances)
  • 60 ml of extra virgin olive oil
  • 60 ml of water
  • A pinch of salt
  • Spices to taste (for example, chopped rosemary, thyme, pepper)

Preparation

  1. In a bowl, mix the lupini flour and the wheat flour with a pinch of salt and the chosen spices.
  2. Add the extra virgin olive oil and start kneading.
  3. Gradually pour in the water until you get a smooth and workable dough.
  4. Transfer the dough onto a work surface and roll it out with a rolling pin to a thickness of about 3-5 mm.
  5. With a knife or a pastry wheel, cut out the crackers in the shape and size you prefer.
  6. Place the crackers on a baking tray lined with parchment paper, making sure to leave a little space between each one.
  7. Bake the crackers in a preheated oven at 180 °C for about 15-20 minutes, until they become golden and crispy.
  8. Let them cool completely before serving.

Lupini are legumes that are much appreciated in Mediterranean cuisine, especially as a snack after being pickled. They are an excellent source of plant proteins and fibers, and unlike other legumes, they contain very few carbohydrates. These crackers are a great alternative to the more common packaged snacks and can be customized with an Italian touch by adding fresh aromatic herbs such as rosemary or basil.
