Luganega Wheel with Roasted Vegetables

Preparation

  1. Preheat the oven to 200 °C.
  2. Wash and cut the vegetables: peel the potatoes and carrots and dice them, cut the zucchini and bell pepper into not too small pieces, roughly slice the onion.
  3. Arrange the vegetables in a baking dish, add the aromatic herbs (rosemary, sage, thyme) to taste, salt, pepper, and drizzle with extra virgin olive oil. Mix the vegetables well to ensure they are evenly seasoned.
  4. Create space in the center of the vegetables and place the spiral luganega.
  5. Bake everything and cook for about 40-50 minutes, or until the vegetables are golden and the sausage is cooked through. During cooking, turn the luganega once to ensure even cooking.
  6. Once ready, remove from the oven and let rest for a couple of minutes before serving.

An Italian touch to this dish might be the addition of a sprig of rosemary on top of the luganega, to further flavor the meat with the unmistakable scent of the herb.
