Luganega sausage with potatoes
17/11/2023Luganega sausage with potatoes is a hearty and very appreciated dish in Italian cuisine. Luganega is a type of fresh sausage typical of the northern regions of Italy, but can be found or replaced with other quality fresh sausages in other regions or countries. Here’s how to prepare it:
Ingredients
- 500g of luganega sausage
- 800g of potatoes
- 1 onion
- 2 cloves of garlic
- 4 tablespoons of extra virgin olive oil
- Salt to taste
- Black pepper to taste
- Fresh rosemary (optional)
- White wine, about one glass (optional)
Preparation

Begin by peeling the potatoes and cutting them into not too small pieces. Put them in a bowl with cold water to prevent them from blackening.

Finely slice the onion and garlic. In a large pan, heat the extra virgin olive oil and fry the onion and garlic until they become transparent.

Drain the potatoes, dry them and add them to the pan with the onion and garlic. Let them brown over medium-high heat for a couple of minutes, stirring occasionally.

Prick the luganega with a fork to prevent it from bursting during cooking and add it to the pan with the potatoes. Allow it to brown well on all sides.

Add salt, pepper, and fresh rosemary to taste. If you wish, you can deglaze with a glass of white wine until the alcohol has evaporated.

Lower the flame, cover the pan with a lid and cook for about 20-25 minutes, or until the potatoes and luganega are well cooked. During cooking, stir occasionally and check if you need to add a little water to prevent everything from sticking to the bottom.

Once everything is cooked perfectly, turn off the heat and let the dish rest for a few minutes before serving hot.
