Louisiana Jambalaya

Jambalaya is a rich and flavorful dish, typical of Creole and Cajun cuisine in Louisiana. It often varies in ingredients and preparation, depending on the tradition. I will provide you with an Italian twist on this classic Jambalaya recipe.

Ingredients

  • 200g rice
  • 200g chicken, cut into pieces
  • 200g smoked sausage, sliced
  • 100g shelled shrimp
  • 1 red bell pepper, diced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 400g peeled tomatoes
  • 500ml chicken broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 pinch of chili powder
  • Salt and black pepper, to taste
  • Extra virgin olive oil, as needed

Preparation

  1. In a large skillet, heat a drizzle of oil and sauté the onion and garlic until they become translucent.
  2. Add the chicken and sausage and brown until they are well golden.
  3. Incorporate the bell pepper, and cook for a few minutes.
  4. Add the rice, paprika, oregano, thyme, and chili powder and stir well to flavor the rice.
  5. Pour in the peeled tomatoes and chicken broth, bring to a boil and then lower the heat. Cover and let cook for about 20 minutes or until the rice is almost cooked.
  6. Add the shrimp, adjust with salt and pepper and cook for another 5-10 minutes, until the rice is tender and the shrimp are cooked.
  7. Turn off the heat and let the Jambalaya rest for a few minutes before serving.
