Long Fusilli with Squid Sauce

Ingredients

  • 350 g of long fusilli
  • 500 g of squid, cleaned and cut into rings or strips
  • 400 g of tomato puree or canned peeled tomatoes
  • 2 cloves of garlic, minced
  • Chopped fresh parsley
  • 100 ml of dry white wine
  • Extra virgin olive oil
  • Chili pepper (optional)
  • Salt and pepper to taste

Preparation

  1. In a large pan, heat the olive oil and sauté the garlic (and chili pepper if used) until it becomes golden.

  6. Meanwhile, cook the fusilli in a pot with plenty of salted water until al dente.

  7. Drain the pasta and transfer it to the pan with the squid sauce.

  8. Mix the ingredients well over low heat for a few minutes to blend the flavors.
