Lollipop Cookies

Lollipop-shaped cookies are ideal for birthday parties or to surprise the little ones (but grown-ups too!). They can also be a fun activity to do together in the kitchen. Here’s how to make them:

Ingredients

  • 300 grams of flour
  • 150 grams of sugar
  • 150 grams of butter at room temperature
  • 1 egg
  • 1 packet of vanillin
  • 1 pinch of salt
  • Chocolate drops or colorful sprinkles for decorating
  • Lollipop sticks or long skewers
  • 1 beaten egg yolk (for brushing)

Preparation

  1. In a bowl, mix the flour with the sugar, vanillin, and a pinch of salt.
  2. Add the butter, cut into small pieces, and the egg. Work the ingredients until you obtain a homogenous and compact dough.
  3. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
  4. Preheat the oven to 180 °C.
  5. Roll out the dough on a lightly floured surface until it’s about 0.5 cm thick.
  6. Use a circular cutter (or any shape you prefer) to cut out the cookies and place them on a baking sheet lined with parchment paper.
  7. Gently insert a lollipop stick into each cookie, making sure it’s well attached to the dough.
  8. Brush the surface of the cookies with the beaten egg yolk.
  9. Decorate the cookies with chocolate drops or colorful sprinkles, pressing them lightly into the dough.
  10. Bake the cookies for about 10-12 minutes or until they are golden.
  11. Once baked, let them cool completely before removing them from the parchment paper.

Lollipop cookies have a relatively recent history, often associated with American bakeries seeking to attract young customers with colorful and fun creations. However, with the addition of a good layer of melted dark chocolate and a sprinkle of hazelnut grains, you can give these cookies an irresistible Italian touch.
