Tagliolini with Lobster on Burrata Cream

Ingredients

  • 320g of fresh tagliolini
  • 1 lobster, approximately 600-800g
  • 200g of burrata
  • 100ml of fresh cream
  • 1 clove of garlic
  • Fresh parsley to taste
  • Chili pepper to taste (optional)
  • Extra virgin olive oil
  • Salt and pepper

Preparation

  1. Start with cooking the lobster. Bring a pot of salted water to a boil and immerse the lobster. Cook for about 8-10 minutes. After cooking, set it aside to cool. Then, extract the meat from the claws and tail and cut it into not too small pieces.

  2. In the meantime, prepare a cream with the burrata and fresh cream. Place the burrata in a bowl and mash it with a fork until almost liquid. Add the cream and mix the mixture until it has a creamy consistency. Season with salt and pepper.

  3. In a large pan, lightly fry the garlic clove in extra virgin olive oil. Add the lobster meat and sauté for a couple of minutes. If you like, you can add a pinch of chili pepper.

  4. Cook the tagliolini in plenty of salted water following the instructions to achieve an ‘al dente’ texture, then drain and transfer them to the pan with the lobster, adding some of the cooking water to emulsify if necessary.

  5. Plate by placing a spoonful of burrata cream at the base, lay the tagliolini with lobster on top and garnish with chopped fresh parsley.
