Ingredients

  • 320 g of linguine
  • 200 g of canned tuna (better if it’s of good quality)
  • 250 g of cherry tomatoes
  • 2 cloves of garlic
  • Fresh parsley to taste
  • Chili pepper (optional)
  • Extra virgin olive oil to taste
  • Salt to taste

Preparation

  1. Start by bringing a large pot of salted water to a boil to cook the pasta.
  2. In the meantime, wash and cut the cherry tomatoes in half or into quarters, depending on your preference.
  3. In a large frying pan, heat a drizzle of extra virgin olive oil and fry the whole garlic cloves until they become golden, then remove them. If you like chili pepper, you can add it at this stage.
  4. Add the cherry tomatoes to the pan and cook for a few minutes until they start to become soft.
  5. Drain the tuna and break it into chunky pieces, then add it to the pan with the cherry tomatoes. Let it flavor for a few minutes, then turn off the heat.
  6. When the water boils, cook the linguine following the cooking time indicated on the package to have them al dente.
  7. Drain the pasta while preserving some of the cooking water and transfer it to the pan with the tuna and cherry tomato seasoning.
  8. Turn the heat back on and toss the linguine with the sauce, adding some of the cooking water to bind and cream everything together.
  9. Turn off the heat, sprinkle the dish with chopped fresh parsley and a drizzle of raw oil.

The dish is ready to be served! You can accompany this delicious first course with a glass of fresh white wine, such as Vermentino or Fiano, to enhance its flavors.
