Linguine with Swordfish and Lemon

Ingredients

  • 320 g of linguine
  • 200 g of swordfish in cubes
  • Juice of 1 lemon
  • Grated zest of 1 organic lemon
  • 2 tablespoons of extra virgin olive oil
  • 1 clove of garlic
  • Chopped fresh parsley (to taste)
  • Salt and pepper to taste
  • Some salted capers (rinsed and chopped, optional)
  • Taggiasche olives or other sweet varieties, pitted and chopped (optional)

Preparation

  1. Put a pot of generously salted water on to boil for the linguine. When the water boils, cook the pasta until al dente according to the package instructions.

  2. While the pasta is cooking, heat the extra virgin olive oil in a large skillet and add the garlic clove, letting it brown slightly.

  3. Add the swordfish cubes to the skillet and cook over medium heat for a few minutes until golden brown on all sides. Be careful not to overcook the fish to prevent it from becoming dry.

  4. Remove the garlic clove and add the lemon juice and zest. If you wish, you can also add the capers and olives. Season with salt and pepper.

  5. Once the pasta is al dente, drain it and transfer it to the skillet with the swordfish sauce. Stir well and let it flavor for a minute.

  6. Off the heat, sprinkle the linguine with swordfish and lemon with chopped fresh parsley to add a touch of color and flavor.
