Ingredients

  • 320 g of linguine
  • 200 g of cleaned shrimp
  • 2 medium zucchinis
  • 1 sachet of saffron powder
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chopped parsley (optional)

Preparation

  1. Start by heating a pot of salted water for the linguine. While the water is coming to a boil, you can proceed with the preparation of the sauce.
  2. Wash the zucchinis and cut them into rounds or, if you prefer, julienne (thin strips).
  3. In a large skillet, heat a drizzle of extra virgin olive oil with a whole clove of garlic. When the garlic turns golden, remove it and add the zucchinis to sauté over medium-high heat.
  4. While the zucchinis are browning, cook the linguine in boiling water following the package instructions for al dente cooking.
  5. In the meantime, add the shrimp to the zucchinis and let them cook for a few minutes, until they turn pink.
  6. Dissolve the sachet of saffron in a small amount of hot water and pour it into the skillet with the zucchinis and shrimp, stirring well. Season with salt and pepper to your taste.
  7. Drain the al dente linguine and transfer them to the skillet with the sauce. Toss everything together for a few minutes, so that the flavors blend well.
  8. If desired, sprinkle with chopped parsley before serving to add a touch of color and freshness.
