Ingredients
- 320 g of linguine
- 200 g of cleaned shrimp
- 2 medium zucchinis
- 1 sachet of saffron powder
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- Chopped parsley (optional)
Preparation
- Start by heating a pot of salted water for the linguine. While the water is coming to a boil, you can proceed with the preparation of the sauce.
- Wash the zucchinis and cut them into rounds or, if you prefer, julienne (thin strips).
- In a large skillet, heat a drizzle of extra virgin olive oil with a whole clove of garlic. When the garlic turns golden, remove it and add the zucchinis to sauté over medium-high heat.
- While the zucchinis are browning, cook the linguine in boiling water following the package instructions for al dente cooking.
- In the meantime, add the shrimp to the zucchinis and let them cook for a few minutes, until they turn pink.
- Dissolve the sachet of saffron in a small amount of hot water and pour it into the skillet with the zucchinis and shrimp, stirring well. Season with salt and pepper to your taste.
- Drain the al dente linguine and transfer them to the skillet with the sauce. Toss everything together for a few minutes, so that the flavors blend well.
- If desired, sprinkle with chopped parsley before serving to add a touch of color and freshness.
