Seafood Linguine
17/11/2023Seafood Linguine is a classic dish of Italian cuisine based on fish. Here is the recipe:
Ingredients
- 400 g of linguine
- 400 g of assorted seafood (mussels, clams, squid, shrimps, scampi)
- 2 cloves of garlic
- 1 fresh red chili pepper (optional)
- 200 g of cherry tomatoes or a can of cherry tomatoes
- Fresh parsley
- 100 ml of dry white wine
- Extra virgin olive oil
- Salt and pepper to taste
Preparation

Thoroughly clean the seafood. If you are using clams and mussels, soak them in cold salted water for an hour to expel the sand.

In a large pan, heat the extra virgin olive oil and sauté the chopped garlic and chili pepper.

Add the squid rings and stir-fry them over high heat.

Add the cherry tomatoes, cut in half (or whole if they are small) and cook for a couple of minutes.

Deglaze with white wine and let it evaporate.

Add the seafood, cover with a lid, and cook until the clams and mussels open.

Meanwhile, cook the linguine in plenty of salted water following the instructions on the package.

Drain the pasta al dente and transfer it to the pan with the seafood, letting it flavor in the sauce for a couple of minutes.

Adjust the seasoning with salt and pepper and sprinkle with chopped fresh parsley before serving.
