Linguine with Scampi Sauce

Linguine with scampi sauce is a delicious and refined dish. Here is the recipe to prepare it in the Italian style:

Ingredients

  • 320g of linguine
  • 400g of fresh scampi
  • 2 cloves of garlic
  • 100ml of dry white wine
  • Chopped parsley to taste
  • Extra-virgin olive oil to taste
  • Salt and pepper to taste
  • Chili pepper (optional)

Preparation

  1. Clean the scampi by removing the shell and the intestine. Keep aside the heads and shells as they will be useful for the sauce.

  2. Cook the linguine in plenty of salted water, following the cooking time indicated on the package to get an al dente texture.

  3. While the pasta cooks, take a large pan and heat a drizzle of extra-virgin olive oil.

  4. Add the garlic cloves and let them brown. If you want a spicy touch, you can also add chili pepper.

  5. Join the carapaces and heads of the scampi in the pan and sauté them well so that they release their flavor.

  6. Deglaze with white wine and let the alcohol evaporate over high heat.

  7. Crush the heads of the scampi well to extract all the juices, and if you have a strainer, you can filter the obtained sauce to have a finer result.

  8. Add the scampi to the pan and cook them for a few minutes. Adjust with salt and pepper.

  9. Drain the linguine al dente and transfer them to the pan with the scampi, stirring well to blend the flavors.

  10. Add chopped parsley as desired and serve immediately.
