Linguine with Scampi

Linguine with scampi is a rich and flavorful dish, perfect for a special dinner. Here’s how to prepare it:

Ingredients

  • 320 g linguine
  • 400 g scampi
  • 2 cloves of garlic
  • Parsley to taste
  • Chili pepper to taste (optional)
  • 100 ml white wine
  • Extra virgin olive oil to taste
  • Salt to taste

Preparation

  1. Clean the scampi: remove the head and shell, taking care not to damage the flesh, and make an incision along the back to remove the intestinal tract.
  2. In a pan, sauté the chopped garlic with a drizzle of oil, add chili pepper if you like a bit of spice. Then, remove the garlic once golden.
  3. Add the scampi to the pan and quickly sauté them.
  4. Deglaze with white wine and let the alcohol evaporate.
  5. Cook the linguine in plenty of salted water following the package instructions to obtain al dente pasta.
  6. Drain the linguine and transfer them to the pan with the scampi, setting aside some of the cooking water.
  7. Toss the linguine with the scampi, adding a little cooking water if necessary to bind the sauce well.
  8. At the end of cooking, turn off the heat and add plenty of freshly chopped parsley.

Serve immediately to enjoy the dish at its best.
