Linguine with Lemon and Basil

Linguine with Lemon and Basil is a fresh and aromatic dish. Follow this simple recipe for a delicious outcome:

Ingredients

  • 350 g of linguine
  • Juice and grated zest of 2 untreated lemons
  • A bunch of fresh basil
  • 2 cloves of garlic
  • 100 ml of extra virgin olive oil
  • 80 g of grated Parmesan cheese
  • Salt and pepper to taste

Preparation

  1. Bring water to a boil in a large pot and add a good amount of salt once it is boiling.

  2. Add the linguine and cook until al dente according to the instructions on the package.

  3. Meanwhile, in a large bowl, emulsify the lemon juice with the extra virgin olive oil, salt, pepper, and some of the grated lemon zest.

  4. Add the chopped garlic and hand-torn basil leaves, discarding the tougher stems.

  5. Drain the pasta, saving some of the cooking water.

  6. Remove the garlic from the bowl with the lemon emulsion, add the linguine and grated Parmesan. Mix well, adding a bit of the cooking water to make the sauce creamier.

  7. Serve immediately, garnished with additional fresh basil leaves and more grated lemon zest for an intensified fragrance.
