Ingredients

  • 320 g of linguine
  • 400 g of cherry tomatoes
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Brown sugar
  • Salt and pepper to taste
  • Fresh basil
  • Grated Pecorino or Parmesan cheese (optional)

Preparation

  1. Prepare the cherry tomato confit by placing them in a baking dish with one peeled and crushed garlic clove, a sprinkle of brown sugar, salt, pepper, and a good drizzle of extra virgin olive oil. Mix well to coat all the cherry tomatoes.
  2. Bake in a preheated oven at 120°C for about 1 hour and 30 minutes, or until the tomatoes are wilted and slightly caramelized.
  3. In the meantime, cook the linguine in plenty of salted water according to the package instructions for al dente pasta.
  4. Drain the pasta, preserving some of the cooking water.
  5. In a pan, sauté the other garlic clove in a bit of extra virgin olive oil and then remove the garlic.
  6. Add the linguine to the pan along with the cherry tomato confit and a bit of the pasta cooking water to emulsify.
  7. Gently mix the linguine with the cherry tomatoes, taking care not to break them too much.
  8. Serve and add hand-torn fresh basil leaves for garnish.
  9. If desired, you can finish with a sprinkling of grated Pecorino or Parmesan cheese.
