Ingredients
- 320 g of linguine
- 400 g of cherry tomatoes
- 2 cloves of garlic
- Extra virgin olive oil
- Brown sugar
- Salt and pepper to taste
- Fresh basil
- Grated Pecorino or Parmesan cheese (optional)
Preparation
- Prepare the cherry tomato confit by placing them in a baking dish with one peeled and crushed garlic clove, a sprinkle of brown sugar, salt, pepper, and a good drizzle of extra virgin olive oil. Mix well to coat all the cherry tomatoes.
- Bake in a preheated oven at 120°C for about 1 hour and 30 minutes, or until the tomatoes are wilted and slightly caramelized.
- In the meantime, cook the linguine in plenty of salted water according to the package instructions for al dente pasta.
- Drain the pasta, preserving some of the cooking water.
- In a pan, sauté the other garlic clove in a bit of extra virgin olive oil and then remove the garlic.
- Add the linguine to the pan along with the cherry tomato confit and a bit of the pasta cooking water to emulsify.
- Gently mix the linguine with the cherry tomatoes, taking care not to break them too much.
- Serve and add hand-torn fresh basil leaves for garnish.
- If desired, you can finish with a sprinkling of grated Pecorino or Parmesan cheese.
