Linguine with Squid and Cherry Tomatoes
17/11/2023Here’s a recipe for tasty Linguine with Squid and Cherry Tomatoes, with a classic Italian touch:
Ingredients
- 320 g of linguine
- 400 g of fresh squid, cleaned and cut into rings
- 250 g of cherry tomatoes, cut in half
- 2 cloves of garlic
- Chopped fresh parsley
- Extra virgin olive oil
- Salt and pepper
- Chili pepper (optional)
- White wine (a little, for deglazing)
Preparation
- Sauté the garlic cloves in a pan with extra virgin olive oil, and if you like, add some chopped chili pepper to give the dish some spiciness.
- Add the squid rings and sauté until they begin to color.
- Deglaze with a little white wine and let the alcohol evaporate.
- Add the cherry tomatoes cut in half and cook for about 5-10 minutes until the tomatoes start to break down, forming a sauce. Adjust with salt and pepper.
- Meanwhile, cook the linguine in plenty of salted water following the cooking time on the package to have al dente pasta.
- Drain the pasta, reserving some of the cooking water.
- Add the linguine to the pan with the squid and cherry tomato sauce, mixing well and adding some of the cooking water to bind everything together.
- Sprinkle with chopped fresh parsley before serving.
For an additional Italian touch, you might garnish the dish with a drizzle of raw extra virgin olive oil and, if you like, a sprinkle of toasted breadcrumbs to add a crunchy texture.
