Linguine with Squid and Cherry Tomatoes

Here’s a recipe for tasty Linguine with Squid and Cherry Tomatoes, with a classic Italian touch:

Ingredients

  • 320 g of linguine
  • 400 g of fresh squid, cleaned and cut into rings
  • 250 g of cherry tomatoes, cut in half
  • 2 cloves of garlic
  • Chopped fresh parsley
  • Extra virgin olive oil
  • Salt and pepper
  • Chili pepper (optional)
  • White wine (a little, for deglazing)

Preparation

  1. Sauté the garlic cloves in a pan with extra virgin olive oil, and if you like, add some chopped chili pepper to give the dish some spiciness.
  2. Add the squid rings and sauté until they begin to color.
  3. Deglaze with a little white wine and let the alcohol evaporate.
  4. Add the cherry tomatoes cut in half and cook for about 5-10 minutes until the tomatoes start to break down, forming a sauce. Adjust with salt and pepper.
  5. Meanwhile, cook the linguine in plenty of salted water following the cooking time on the package to have al dente pasta.
  6. Drain the pasta, reserving some of the cooking water.
  7. Add the linguine to the pan with the squid and cherry tomato sauce, mixing well and adding some of the cooking water to bind everything together.
  8. Sprinkle with chopped fresh parsley before serving.

For an additional Italian touch, you might garnish the dish with a drizzle of raw extra virgin olive oil and, if you like, a sprinkle of toasted breadcrumbs to add a crunchy texture.
