Limoncelli Cookies

Limoncelli cookies are light and fragrant treats, perfect to pair with a cup of tea or as a dessert with a small glass of limoncello. Here’s how to make them:

Ingredients

  • 200 g of type 00 flour
  • 100 g of sugar
  • 100 g of soft butter
  • Grated zest of 1 lemon
  • 1 egg
  • 1 pinch of salt
  • 1/2 teaspoon of baking powder
  • 2 tablespoons of limoncello
  • Powdered sugar (for decoration)

Preparation

  1. Preheat the oven to 180 °C and line a baking tray with parchment paper.
  2. In a large bowl, mix the flour with sugar, baking powder, and a pinch of salt.
  3. Add the soft butter in pieces and the grated lemon zest, then work the ingredients until you get a sandy mixture.
  4. Incorporate the egg and knead until the dough is uniform.
  5. Pour in the two tablespoons of limoncello and mix well all the ingredients.
  6. With your hands, create small balls of dough the size of a walnut. Slightly flatten them and place them on the tray leaving some space between each one.
  7. Bake the cookies for about 15-20 minutes or until they become lightly golden.
  8. Remove the cookies from the oven and let them cool on a wire rack.
  9. When they are completely cooled, dust them with powdered sugar.

These cookies develop a more intense flavor the day after they are made, so they are perfect to prepare in advance. Also, you can play with the proportions of limoncello and lemon zest to achieve a stronger or milder taste according to your preferences.
