Light Meatballs without Bread
17/11/2023I can propose a recipe for light meatballs without bread. In this version, we’ll use alternative ingredients to make the meatballs healthier and lower in carbohydrates.
Ingredients
- 500 g of ground meat (you can choose beef, turkey, or chicken if you prefer a leaner option)
- 1 large egg
- 1 tablespoon of oat flour or chickpea flour (to bind the mixture)
- 2 tablespoons of grated Parmesan cheese (optional for an Italian touch)
- Chopped fresh parsley to taste
- Salt to taste
- Freshly ground black pepper to taste
- 2 tablespoons of extra virgin olive oil
- Garlic powder or one finely chopped garlic clove (optional)
- A pinch of nutmeg (optional)
Preparation
- In a large bowl, combine the ground meat and the egg. Mix well to blend the ingredients.
- Add the oat or chickpea flour, the Parmesan (if you’re using it), the chopped parsley, salt, pepper, garlic, and nutmeg.
- Work all the ingredients with your hands until you have a homogenous mixture, then shape into balls about the size of a walnut.
- Heat the extra virgin olive oil in a non-stick frying pan over medium heat.
- Cook the meatballs in the hot oil, turning them gently, until they are golden brown on all sides and cooked evenly (about 8-10 minutes depending on size).
- Once ready, place them on paper towels to remove excess oil.
Your light meatballs without bread are ready to be served! Pair them with a simple tomato sauce or a yogurt sauce for a fresh and light touch.
