Preparation

  1. In a large bowl, combine the ground meat and the egg. Mix well to blend the ingredients.
  2. Add the oat or chickpea flour, the Parmesan (if you’re using it), the chopped parsley, salt, pepper, garlic, and nutmeg.
  3. Work all the ingredients with your hands until you have a homogenous mixture, then shape into balls about the size of a walnut.
  4. Heat the extra virgin olive oil in a non-stick frying pan over medium heat.
  5. Cook the meatballs in the hot oil, turning them gently, until they are golden brown on all sides and cooked evenly (about 8-10 minutes depending on size).
  6. Once ready, place them on paper towels to remove excess oil.
