Ingredients

  • 200 g of dry biscuits (like Digestive or Oro Saiwa)
  • 100 g of powdered sugar
  • 100 g of soft butter
  • Grated zest of 1 organic lemon
  • Juice of 1 lemon
  • Grated coconut or other for the coating (powdered sugar, grated white chocolate, etc.)

Preparation

  1. Start by finely chopping the dry biscuits using a mixer until you obtain a fine powder.
  2. In a bowl, combine the soft butter with the powdered sugar and work the two ingredients until you get a smooth cream.
  3. Add the grated lemon zest and juice, making sure to strain it to keep out the seeds. Mix all the ingredients well until they are fully combined.
  4. Incorporate the chopped biscuits into the lemon butter cream and mix until you get a homogeneous mixture.
  5. Put the mixture in the fridge for about 30 minutes, so that it slightly hardens and is easier to work with.
  6. After the mixture has cooled, take small portions of the mass and form balls with your hands.
  7. Roll each truffle in the grated coconut or the chosen coating until completely covered.
  8. Place the truffles on a tray and put them in the refrigerator for at least an hour before serving.
