Lemon Tiramisu

Lemon Tiramisu is a fresh and light twist on the classic Tiramisu. Here’s the recipe with an Italian touch:

Ingredients

  • 250 g of mascarpone cheese
  • 100 g of powdered sugar
  • 3 eggs (with whites and yolks separated)
  • 200 ml of fresh cream for whipping
  • Ladyfingers as needed
  • Grated zest of 1 lemon
  • Juice of 2 lemons
  • 1 glass of limoncello (optional)
  • Granulated sugar for the syrup
  • Water as needed for the syrup

Preparation

  1. Start by separating the yolks from the whites. Whip the yolks with the powdered sugar until the mixture is light and frothy.
  2. Add the mascarpone to the mixture of yolks and sugar and work until you get a smooth cream.
  3. Gently incorporate the grated lemon zest to flavor the mixture.
  4. Whip the fresh cream and fold it into the mascarpone mixture, mixing gently from the bottom up to avoid deflating it.
  5. In a separate bowl, whip the egg whites until stiff and carefully fold them into the mascarpone and cream mixture.
  6. Prepare the syrup by mixing lemon juice with water and granulated sugar to taste (if you want an extra touch, you can add a bit of limoncello).
  7. Slightly soak ladyfingers in the syrup and lay them as the first layer in a serving dish.
  8. Cover the first layer of ladyfingers with part of the mascarpone cream and level the surface.
  9. Create a second layer of soaked ladyfingers and cover them with the remaining mascarpone mixture.
  10. Allow the Lemon Tiramisu to rest in the refrigerator for at least 4 hours; this will let the flavors blend perfectly.
  11. Before serving, you can garnish with additional grated lemon zest or, if you prefer, a little powdered sugar.
