Ingredients

  • 250 g of egg tagliolini
  • 2 organic lemons (grated zest and juice)
  • 100 ml of fresh cream
  • 30 g of butter
  • Salt to taste
  • White pepper to taste
  • Grated Parmesan cheese to taste

Preparation

  1. In a large pot, bring salted water to a boil and cook the tagliolini following the instructions on the package to achieve al dente pasta.
  2. While the pasta is cooking, grate the zest of the lemons taking care not to include the white part, which could be bitter. Then squeeze the juice of the lemons.
  3. In a frying pan large enough to contain the tagliolini after they are cooked, melt the butter over medium heat.
  4. Add the grated lemon zest to the melted butter and let it flavor for about one minute.
  5. Pour the cream into the pan and let it warm for a couple of minutes. Add the lemon juice and mix well. If you want a thicker sauce, you can let the cream reduce for a few minutes.
  6. Taste and adjust the seasoning with salt and pepper according to your liking.
  7. Drain the tagliolini, reserving some of the pasta cooking water.
  8. Transfer the tagliolini into the pan with the lemon sauce, mix well to combine everything. If the sauce is too thick, add some of the cooking water until you reach the desired consistency.
  9. Serve immediately, garnishing with grated Parmesan cheese as desired.
