Lemon Dessert

The “Lemon Dessert” I will present to you is a version of a classic Italian dessert: the Lemon Tartlet. This dessert is fresh, fragrant, and perfect for those who love citrus flavors. Here is the recipe to prepare delicious lemon tartlets.

Ingredients

  • 200 g of type 00 flour
  • 150 g of sugar
  • 100 g of soft butter
  • 3 eggs
  • The grated zest of 2 untreated lemons
  • 3 tablespoons of lemon juice
  • 1 packet of baking powder
  • A pinch of salt

For the lemon cream (Lemon curd):

  • 2 lemons (juice and zest)
  • 100 g of sugar
  • 50 g of butter
  • 2 eggs

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, cream the soft butter with the sugar until you have a creamy mixture. Add the eggs one at a time, incorporating them well after each addition.
  3. Add the grated zest of the lemons and the juice, then mix well.
  4. In a second bowl, sift the flour with the baking powder and a pinch of salt.
  5. Fold the dry ingredients into the egg and lemon mixture, mixing gently until well combined.
  6. Pour the mixture into paper cups or a buttered and floured muffin tin, filling them up to two-thirds of their height.
  7. Bake in the oven for about 20-25 minutes or until the tartlets are golden and a skewer inserted in the center comes out clean.
  8. Meanwhile, prepare the lemon curd: in a saucepan, put the lemon juice and zest, sugar, and butter and heat on low until the butter has melted.
  9. In a bowl, lightly beat the eggs and then add them to the pan with the other ingredients, continuing to cook on low heat and stirring continuously until the cream thickens.
  10. Let the tartlets and the cream cool separately.
  11. Once both are cool, cut the top off the tartlets, create a small cavity in the center, and fill it with the lemon curd. Then, top with the “caps” of the tartlets.
