Lemon rolls
17/11/2023Lemon Rolls are a citrusy variation of the more known Cinnamon Rolls, sweet rolls of North American origin. I’ll list the ingredients first and then guide you through the preparation process.
Ingredients for the dough:
- 500 g of all-purpose flour
- 100 g of sugar
- 2 eggs
- 100 g of soft butter
- 250 ml of warm milk
- 7 g of dry yeast or 25 g of fresh brewer’s yeast
- Grated zest of 1 lemon
- 1 pinch of salt
Ingredients for the filling:
- 100 g of soft butter
- 150 g of sugar
- Grated zest of 3 lemons
Ingredients for the glaze:
- 150 g of powdered sugar
- Juice of 1 lemon
- 1 tablespoon of milk or water (if necessary)
Preparation
- To prepare the dough, dissolve the yeast in the warm milk with a teaspoon of sugar. Let it sit until it starts to bubble.
- In a larger bowl, mix the flour with the rest of the sugar and the grated lemon zest. Add the eggs, the softened butter, and the pinch of salt.
- Combine the mixture with the yeast and begin to knead. Transfer the dough onto a floured surface and work it until you have a smooth and elastic dough.
- Place the dough in a slightly floured bowl, cover it with a damp tea towel and let it rise until it doubles in volume, about 1-2 hours.
- In the meantime, prepare the filling by mixing the soft butter with the sugar and the grated lemon zest.
- Once risen, roll out the dough on a floured surface into a rectangle about 5 mm thick.
- Spread the lemon butter filling over it, then roll up the dough starting from the longer side.
- Cut the roll into slices about 2 cm thick and place them in a baking tray lined with parchment paper.
- Cover the Lemon Rolls with a tea towel and let them rise again for 30 minutes.
- Preheat the oven to 180 °C and bake the Lemon Rolls for about 25-30 minutes or until golden brown.
- As they cool, prepare the glaze by mixing the powdered sugar with the lemon juice until smooth and flowing. If the glaze is too thick, add a little milk or water.
- Pour the glaze over the slightly warm Lemon Rolls.
