Pasta al limone

Ingredients

  • 320 g of pasta (spaghetti, linguine or your preferred long pasta)
  • Grated zest and juice of 2 untreated lemons
  • 60 g of butter (clarified for a finer result if possible)
  • 200 ml of fresh cream
  • 80 g of finely grated Parmesan cheese
  • Salt and black pepper to taste
  • A sprig of fresh basil or parsley for garnish (optional)
  • Additional lemon zest for garnish (optional)

Preparation

  1. Bring a pot of salted water to a boil for the pasta and cook it al dente following the instructions on the package.

  2. Meanwhile, in a large frying pan, melt the butter over medium-low heat. Add the lemon zest and juice and let it flavor for a couple of minutes.

  3. Pour the cream into the pan with the butter and lemon. Allow the cream to warm up but do not let it reach boiling point. Add the grated Parmesan cheese and mix everything until you have a creamy sauce. Season with salt and pepper to your liking.

  4. When the pasta is cooked al dente, drain it and transfer it directly into the pan with the lemon sauce. Add a little pasta cooking water if necessary to make the sauce smoother and stir the pasta over low heat for a few minutes, until it is well coated with the sauce.

  5. Serve the lemon pasta hot, garnished with chopped fresh basil or parsley, and if desired, with additional grated lemon zest.
