Ingredients
- 200 g of all-purpose flour
- 150 g of sugar
- 100 g of butter at room temperature
- 3 eggs
- 1 packet of baking powder
- Grated zest of 1 lemon
- A pinch of salt
- Lemon marmalade (about 200-300 g, depending on your preference)
Preparation
- Preheat the oven to 180 °C.
- In a bowl, cream the soft butter with sugar until you have a frothy and light mixture.
- Add the eggs, one at a time, continuing to mix.
- Stir in the grated lemon zest and a pinch of salt.
- Sift the flour and baking powder and add them to the mixture, blending well until you get a smooth batter.
- Butter and flour a cake pan (or line it with parchment paper) and pour half of the batter into it.
- Spread a uniform layer of lemon marmalade over it.
- Cover with the remaining batter.
- Bake in the oven for about 30-35 minutes or until a toothpick inserted in the center of the cake comes out clean.
