Lemon Pork Loin Rolls

Preparation

  1. Begin with the marinade: grate the zest of one lemon and squeeze the juice. Place the pork loin slices in a bowl with the lemon juice and zest, salt, and pepper and let marinate for about 30 minutes.

  2. Meanwhile, in a small bowl, mix the breadcrumbs with the Parmesan, crushed garlic, a pinch of salt and pepper, and the grated zest of the remaining lemon.

  3. Take the marinated pork loin slices and pat them dry with paper towels. Spread the breadcrumb and Parmesan mixture on each slice, add a sage leaf and then roll up the slices, securing them with kitchen twine to create the rolls.

  4. Heat a drizzle of oil in a pan and brown the pork loin rolls on all sides until well golden.

  5. Deglaze with the white wine and let the alcohol evaporate. Then, lower the heat, cover with a lid, and cook for about 20-30 minutes. If necessary, add a little water during cooking to prevent the rolls from drying out too much.

  6. Once cooked, remove the rolls from the pan, cut off the kitchen twine and serve with some of the cooking juices and a sprinkle of chopped fresh parsley.
