Ingredients

  • 250 g of 00 flour
  • 125 g of cold butter, cubed
  • 100 g of icing sugar
  • 1 large egg

  • Fruit jam of your choice (about 300 g)
  • 1 egg white (for the glaze)
  • 150 g of icing sugar (for the glaze)
  • Juice of 1 lemon (for the glaze)

Preparation

  1. Start by preparing the shortcrust pastry: combine the flour and cold butter in a bowl or on a work surface and rub it with the tips of your fingers until you get a mixture resembling breadcrumbs.
  2. Add the icing sugar, lemon zest, and a pinch of salt. Make a well in the center and add the egg and yolk. Quickly knead until you form a smooth ball.
  3. Wrap the pastry ball in cling film and let it rest in the refrigerator for at least 30 minutes.
  4. Preheat the oven to 180 °C (350 °F). Roll out the shortcrust pastry into a disc about 5 mm thick and line a previously buttered and floured tart pan.
  5. Spread the fruit jam of your choice over the pastry base, taking care not to overdo it to avoid spills during cooking.
  6. Bake for about 25-30 minutes or until the pastry is golden.
  7. While the tart is baking, prepare the glaze by mixing the egg white with icing sugar and lemon juice in a bowl until you get a smooth and homogeneous mixture. If necessary, add more icing sugar to reach the desired consistency.
  8. Once cooked, remove the tart from the oven and let it cool slightly.
  9. Brush the surface of the tart with the lemon glaze and let cool completely to harden the glaze before serving.
