Lemon Fritters

Ingredients

  • 250g of flour
  • 2 eggs
  • 50g of sugar
  • Grated zest of 1 lemon (make sure to use an untreated lemon)
  • 1 pinch of salt
  • 1/2 packet of baking powder for sweets
  • 100 ml of milk
  • Seed oil for frying

Preparation

  1. In a large bowl, beat the eggs with the sugar until frothy.
  2. Add the grated lemon zest and a pinch of salt.
  3. Incorporate the sifted flour with the baking powder, alternating with the milk, until the mixture is smooth and lump-free.
  4. Let the batter rest for about 30 minutes, covered with a clean cloth.
  5. Heat plenty of seed oil in a deep-sided pan or a deep fryer. The oil is ready when, dipping a toothpick into the oil, small bubbles form around it.
  6. With the help of two spoons, take portions of the batter and gently slide them into the hot oil. Be careful not to overcrowd the pan to prevent the oil temperature from dropping too much.
  7. Fry the fritters until they are golden and puffed, then turn them to brown both sides evenly.
  8. Drain them on paper towels to remove excess oil.
  9. Serve them hot, sprinkled with icing sugar or granulated sugar, as you like.
